I love it because of Portage which is the best Linux package
repository in existance. No other repository has all the good
packages you need, all by default:
nvidia-driver
vmware-server
..etc.

Even if there is a lot of configuration to do while you do your install, it's more or less the only install/update you ever will do, as updating the system will automatically see to that you have the latest version of Gentoo (compare that with Fedora, where you will stay at the current version until you download the new version and do an update that has the risk of breaking the whole installation).
There are quite many packages in the portage, think it's something like 20000-30000 different programs to select from (each package can have many ebuilds). You can then pick different options for different packages, so that you get programs that do what you want (compare with Debian where you can't add support for arm when you install mplayer).
Gentoo may be the distribution that support the most architectures (compare that to Ubuntus x86 and amd64 support), which means that I can run Gentoo on all my computer (Sparc, PowerPC, x86, amd64), and I do use Gentoo at work too.
